Pastel de chocolate con vino tinto, cerezas y pistaches

I love wine and all the moments that surround it in my life. I always associate wine with friends, good moments and good food.

When I learned about The Dreaming Tree Wines philosophy I fell in love with it immediately.  The Dreaming Tree Wines are made by a collaboration between Dave Matthews, yes the worldwide known musician, and award- winning winemaker Sean McKenzie. They both came up with approachable and high-quality California wines in the fall of 2011. 

The collection of wines is amazing and they even thought of how to make it conscious from vine to table. This includes labels, that are made with 100% recycled brown Kraft paper, bottles that are a quarter pound lighter than the average wine bottle, leaving a smaller carbon footprint through transportation, and bottles and natural corks that are recyclable. 

This cake is a dream come true for pairing it with wine. It has all the richness of chocolate and the flavors and complexity of red wine. I used Pinot Noir grape for this chocolate cake because of the black cherry, wild strawberry, and toasty caramel notes. Even though I used this wine for dessert, it would also be great paired with mushrooms and risotto.

This cake is moist and full of texture and flavor, it is the perfect combination between a brownie and a cake.  I can’t imagine anything better than the combination of red wine, chocolate, cherries, and pistachios. Chocolate and red wine cake with cherries and pistachios


Serves: 8


1⅔ cups flour

1 cup cocoa powder

2 teaspoons baking powder

pinch of salt

¾ cup red wine

½ cup vegetable oil

⅔ agave nectar

2 teaspoons vanilla

1 cup frozen cherries

¼ cup chopped pistachios


Preheat oven to 350ºF.

Mix the flour, cocoa, baking powder and pinch of salt.

Add the red wine, vegetable oil, agave nectar and vanilla. Mix well until all the ingredients are integrated.

Line a brownie pan with parchment paper and pour the mixture evenly.

Top with the cherries and pistachios.

Bake for 20 to 25 minutes or until the edges look done.

Be careful though not let it dry.
