La mejor Gumpaste (pasta de goma) para hacer flores de azúcar - Hazla en casa y ahorra dinero.

Ingredientes:

5 cucharaditas de agua tibia, 2 cucharaditas de gelatina en polvo, 500 gramos de azúcar glas tamizada, 3 cucharaditas de goma tragacanto o CMC, 2 cucharaditas de glucosa líquida, 4 cucharaditas de manteca vegetal (ej. Crisco) y más para luego amasarla, 1 clara de huevo grande (no sirven las pasteurizadas).

Mezcla el agua fría con la gelatina en un cuenco pequeño y dejar reposar durante 30 minutos. Mientras tanto tamizar el azúcar 

Poner el bol con la gelatina en una cacerola de agua caliente al baño maría y remover hasta que se disuelva. Calentar una cucharadita en el agua caliente (para que la glucosa no se pegue tanto a ella) y luego añadir la glucosa líquida y toda la manteca vegetal a la mezcla de la gelatina. Seguir calentando hasta que se disuelva y se mezcle completamente.

Poner las claras en la batidora y batirlas un poquito, sólo para espumarlas un poco. Ir agregando el azúcar glass de a poco e ir integrándola con el azúcar. Cuando esté todo integrado, agregar la mezcla de gelatina y batir a velocidad baja , hasta que la pasta esté totalmente integrada. Ahora se agrega el CMC y se mezcla a velocidad fuerte con el azúcar, son pocos segundos, hasta que ves que la masa está más dura y se comienza a despegar de la base de la batidora. No se debe pegar a los dedos.

Sacar la pasta de goma del bol. Trabajarla con las manos con crisco hasta formar una bola homogénea y cubrirla con manteca vegetal. Así se evitará que la pasta forme una costra seca. Introducirla en una bolsa de plástico y guardarla en un recipiente hermético en la nevera. Deja que repose y madure 12 horas antes de utilizarla. 

Amasar bien la pasta de goma antes de usarla., sino se secaría y los bordes se agrietarían. Esta pasta se seca al aire, asi que cuando no la utilices envuélvela bien en plástico.

Si es primera vez que la vas a hacer y no sabes cuán bien va a reaccionar a tu clima, te recomiendo hagas la mitad de la receta.

Continue heating until it dissolves and mix thoroughly.
 
Put the whites in the blender and beat them a little, just to froth them a little. Go adding the glass sugar little by little and go integrating it with the sugar. When everything is integrated, add the gelatin mixture and beat at low speed, until the paste is fully integrated. Now add the CMC and mix at high speed with the sugar, they are a few seconds, until you see that the dough is harder and starts to take off from the base of the blender. It should not stick to the fingers.
 
Remove the paste from the bowl. To work it with the hands with crisco until forming a homogenous ball and to cover it with vegetal shortening. This will prevent the paste from forming a dry crust. Insert it into a plastic bag and store it in an airtight container in the refrigerator. Let it sit and mature 12 hours before using it.
 
Knead the paste well before using it, otherwise it will dry and the edges will crack. This paste dries in the air, so when you do not use it wrap it well in plastic.
