I wrote in this language because is a new challenge for me...so here we go!
For 8-10 cupcakes
INGREDIENTS:
150 grs. flour
2 teaspoon baking powder
25 grs. cornstarch
1/4 cup milk
1/2 cup yoghurt
1/4 cup olive oil or sunflower oil
1/2 teaspoon lemon extract
1 teaspoon lemon zest
2 eggs, lightly beaten
65 grs. of Stevia
1/4 teaspoon salt
Preheat oven to 350°F. Line cupcake tin with cupcake papers.
Combine and sieve flour with baking powder, cornstarch and Stevia. Set aside.
In another bowl, combine oil with eggs, extract, salt, and lemon zest. Add a half of flour, mix a little. Then, add the milk, yoghurt, and beating on low speed util blended. Finish with the half of flour until mixture is smooth.
Scoop batter into prepared tins at 2/3
Bake 18-20 minutes or until a toothpick inserted in center comes out clean.
Can fill them with raspberries, strawberries or blueberries.
