"La coca de pinyons" translated as Pine Nut cake is a delicacy. It is ideal for breakfast or as "afternoon snack", tea time... This recipe is originally from a region called "El Bages" (Catalonia) and came to me thanks to a friend of a friend of my mum....long story. Enjoy!
Ingredientes
300gr de azúcar
3 huevos
300gr harina
2 cucharaditas de levadura
Ralladura piel de un limón
50 ml aceite oliva suave
100ml leche
150ml anís
Una pizca de Sal
30gr de piñones (un puñado)
Ingredients
300gr sugar
3 eggs
300gr wheat flour
2 tsp. baking soda
Grated lemon rind
50 ml soft olive oil
100ml milk
150ml anisette
1 tsp. salt
30gr pine nuts (handful)
Elaboración
En un bol batimos el azúcar con los huevos.
In a bowl mix sugar and eggs using an electric mixer.
Tamizamos la harina y la levadura y la añadimos poco a poco a la mezcla.
Sift wheat flour and baking powder and add to the bowl, mix until integrated.
Añadimos la ralladura del limón, el aceite, la leche, el anís y la sal, mezclamos hasta obtener una masa fina.
Add grated lemon rind, oil, milk, anisette and salt and blend until smooth.
Echamos la masa sobre la misma bandeja del horno cubierta con papel vegetal.
Place the batter on baking tray covered with baking parchment.
Espolvoreamos una buena capa de azúcar y los piñones y horneamos unos 20-30 minutos o hasta que el palillo nos salga limpio.
Gently sprinkle sugar on top and pine nuts. Bake for 20-30 minutes or until until a tester inserted into the centre of the cake comes out clean.
