Crema de calabacín asado con canela

Curiosamente esta receta surgió hace algún tiempo a raíz de que en el momento de hacerla faltara un ingrediente con el que la solía hacer. De esas improvisaciones que no solo salen  bien si no que sorprenden dando como resultado otra receta aún mejor… A falta de nuez moscada, la crema pedía añadir ese toque diferente de alguna especia… ¡¿y porqué no probar con un poco de canela?!

En la cocina árabe e india es muy común incluir la canela en platos salados, así como otras especias como el cardamomo o el anís a las que estamos más acostumbrados a ver en platos dulces. Sin embargo éstas aportan un sabor delicioso y exótico también a los platos salados. Si además asamos el calabacín al horno, añade un toque de sabor tostado muy especial a esta receta. Ni qué decir del aroma mientras se está horneando…

Un clásico ya entre mi repertorio de sopas y cremas para cuando ya empieza a hacer fresquito. Os animo a probarla ¡os sorprenderá! Aquí os dejo la receta  de esta crema de calabacín asado con canela para cuando gustéis.

This recipe funnily occured some time ago because I did not have one of the ingredients I was used to utilize on it. Those kind of improvisation that not only end up well but also surprise you with an even better recipe as a result… In a lack of nutmeg the soup was asking for that kind of special touch the spices have, and I thought… why not trying with some cinnamon?!

In arabic and indian cuisine the use of cinnamon is very common in savoury dishes, as well as other spices like cardamom or anise that we are more used to see on sweet dishes. However they provide a delightful and exotic flavour to them. If in addition you cook the zucchinis in the oven it will give a special roasted touch to this recipe. Goes without saying that the smell while it is in the oven is wondeful. 

A classic among my repertory of soups for the upcoming chilly days. I encourage you to try it, it will surprise you! Here’s the recipe of my roasted zucchini-cinnamon soup for whenever you feel like it

INGREDIENTES: (Para 4 personas)

2 calabacines grandes

2 patatas pequeñas

1/2 puerro

1 o 2 vasos de agua o caldo vegetal

1/2 pastilla de caldo vegetal (excluir si usáis caldo en vez de agua)

1/2 cabeza de ajos entera con piel

Aceite de coco

Canela en polvo, pimienta blanca y sal rosa del himalaya

Leche o nata (crema de leche) vegetal (yo usé nata (crema de leche) de arroz)

Azúcar moreno de caña integral

Para decorar: semillas de sésamo blanco y negro, avellanas tostadas, gotas de crema de arroz… INGREDIENTS: (Serves 4)

2 big zucchinis

2 small potatoes

1/2 leek 

1 or 2 glasses of water or vegetable stock

1/2 stock cube (do not include if using stock instead of water)

1/2 garlic bulb with the skin

Coconut oil

Cinnamon powder, white pepper and pink Himalayan salt

Milk or vegetable cream (I used rice cream)

Cane sugar

To garnish: white and black sesame seeds, toasted hazelnuts, rice cream drops..

PREPARACIÓN: 

Precalentamos el horno a 200ºC

Pelamos parcialmente los calabacines y cortamos en rodajas no muy gordas. Pelamos las patatas y cortamos en pedazos pequeños. Cortamos el puerro en trozos.

En una bandeja forrada con papel vegetal en el fondo, ponemos todo ello y también la cabeza de ajos con piel. Espolvoreamos un poco de azúcar moreno por encima de todo, sal, pimienta blanca y aceite de coco. Echamos por encima canela en polvo generosamente.

Metemos al horno y asamos durante 35-40 minutos.

Una vez listo, sacamos y retiramos la piel de los ajos. Metemos todo en la  Thermomix o batidora eléctrica y añadimos un vaso de agua o caldo, la pastilla de caldo (si usamos agua) y batimos a alta velocidad hasta que quede bien triturado y una textura cremosa.

Añadimos más agua o caldo para alcanzar el espesor deseado. Volvemos a batir y al final echamos un buen chorro de leche o nata (crema de leche) vegetal, mezclamos un poco, corregimos de sal y pimienta, decoramos a nuesto gusto, ¡y está listo! PREPARATION:

Preheat the oven to 200ºC (350ºF aprox.)

Peel partially the zucchinis and cut them in slices. Peel the potaoes and cut into pieces. Cut the leek as well.

In a baking pan cover the bottom with baking paper, place all the above and also the garlic bulb with the skin.Sprinkle some cane sugar over everything, some salt, pepper and coconut oil. Sprinkle cinnamon generously.

Place in the oven and bake for 35-40 minutes.

Once the time is over remove and take the garlic skin out. Put everything on a Thermomix or blender and add a glass of water or stock, the 1/2 stock cube (if using water), and blend at high speed until you get a creamy and smooth texture.

Add more water to achieve the desired thickness. Blend again and at the end pour some vegetable milk or cream, stir well, season with more salt and pepper if needed, garnish and done!
